Not a guide When one is researching culinary schools it helps to have some sort of a way of classifying them. Unfortuneatly the author decided to only list the schools, with almost no other information. I now know the name of every culinary school in texas, and he missed a couple(!), but I know next to nothing about them. All the information listed is what degrees or certificates they offer. No real information on quality.Frankly I found better information for free online. Unless you can't locate information online this book is largely worthless.
